The only catch is, if you have more than one boost, then the remaining one/s will still occupy an inventory slot. That slot isn't available until the boosts have been used. You will have lost your original character's journey, its "history", but otherwise, I can't think of a down side to these level 80 boosts.
Note that you can create a character, level them to 10, open the PvP interface, and teleport to the PvP lobby and test out different builds and how that class feels to play at level 80. So you can try out the different elite specs and builds before you decide to pop your level 80 boost for real. Hard disagree. Path of Fire onwards is very good.
Every character can unlock everything in their Training panel. After they reach level 80, they receive enough hero points from leveling rewards to train all core abilities, but for elite specializations they will need to complete enough hero challenges in PvE or use enough Scrolls of Heroics from WvW Notaries.
